So I recently saw an update for King Kong (UPC 025193167927) where box set content, via Disc IDs, were created for the three discs. It breaks down this way: Disc 1 (Part 1), Disc 2 (Part 2) and Disc 3 (Bonus Material). Wasn't sure if this was allowed as a  Box Set or not. If this were just a 2-disc set with the movie on one disc and special features on the other, it would not.

This is NOT a boxset and the contribution submitted to do this should have been rejected.

Another agreement but I guess it's OK to submit the separate discs for those who want them as long as all information is left in the parent profile.

I disagreee. As for the movie being spread over two discs, the rules say to only create "individual profiles for each movie". This is one movie, so one profile. And as for the third disc of bonus material for an individual film, the rules specifically forbid that ("do not create separate profiles for these discs"). So no, these child profiles should not have been accepted.

Fair point, and by the Rules absolutely correct - I was wrong; I think what I meant was that if the discs were in the dB it doesn't actually affect any correct profile so it wouldn't cause any problems if an individual wanted to track which discs they had watched... and some certainly do as the 'do not create separate bonus disc profiles' has been ignored by screeners  in the past (eg there is one for the Alien Anthology set and 2 for the Blade Runner 5-disc (plus different discs for the various different versions of the film... I suppose then it comes down to how different do they have to be to be considered separate films!).
I'm not saying it's right but if it doesn't affect the 'correct' profile and nobody has to use them I suppose most people don't see the harm.

A release like this one could be compared to e.g. the UK blu-ray release of Ben-Hur with EAN 5051892027892.

There also: one profile, no child profiles. Which is correct per the rules.
